Cheesecake Project has built a cult following for turning a short list of ingredients into something unapologetically decadent. At their stained-glass-adorned bakery and café in Jordaan, pastry chefs work in full view, baking cheesecakes with deeply caramelized tops and lush centers. Opened swiftly after the 2024 debut, a city-center outpost brings the ritual-forming cakes closer to the action.
The star is the Basque cheesecake, the iconic dessert from San Sebastián’s Basque Country. One version sticks close to tradition, while the house’s take layers in a signature cookie crust and a subtle hint of Parmesan. From there, flavors rotate. Pistachio. Pumpkin spice. Chocolatey hazelnut. Speculaas. Each is baked in small batches with high-quality Dutch dairy and served alongside a full specialty coffee menu.
