At Amator, everything begins with obsession. Omelets reach peak form, vinyl is pulled from record-bin deep dives, and the space is designed for listening as much as eating.

The omelets come in three expressions. One gloriously plain and softly set. Another folded with five peppercorns and Grana Padano. A third enriched with gorgonzola and wild chiltepín pepper. Around it, the menu follows the seasons: local greens sautéed with confit garlic and goat cheese, pink radicchio dressed in mirabelle vinaigrette and Vesterhavsost, creamy saffron beans. Coffee comes from April and there’s always bread on the table.
