FAR has outgrown its 22 seats in Vesterbro and put down roots in Valby’s former vegetable market. Here, soaring ceilings and trailing plants frame the experimental kitchen, where vegetables lead the way. Produce grown just 40 kilometers away reaches the menu the day it’s harvested, while fermentation keeps the past in play.

Breakfast brings yogurt with honey-miso granola and seasonal compote, sourdough buns with cheese, and grilled cheese with blue cheese and walnuts. Later, potato flatbread gets kimchi and fermented soy cream cheese, while pea fritters come with kimchi romesco.
