Few would expect one of the East Coast’s best taquerias to be tucked away in Greenpoint. Yet at Taqueria Ramirez, lines start forming early. Here, Giovanni Cervantes and Tania Apolinar serve tacos as a Mexico City taquero would: off a sizzling griddle, from a vat of stewing meat, and behind a small counter where guests happily eat standing—hands-on and unapologetically messy.

Al pastor spins on the trompo, shaved straight onto warm tortillas with pineapple. Suadero—slow-cooked beef confit—lands tender with crisped edges, while spicy longaniza melts into the lard-slicked corn tortilla beneath it. On Tuesdays, a cheesy Gringa al Pastor breaks the rules, grilled until melty between flour tortillas. Each taco comes bare, leaving onions, cilantro, and house salsa for you to finish.
