Politiken declared they ‘belong to a new generation of small, personal restaurants with affordable menus that remind us what a good meal is’. 3100 is a haven for culinary creativity where local seasonal ingredients take center stage, and the vegetable-forward menu has unexpected twists that win over even the most devout meat-eaters. Adorned with endearingly random decor, the atmosphere is a fun hybrid between a dining room, wine cellar, and living room – like being at a really good friend's home. Here, their driving force is fostering connections over mindfully curated food and natural wine. Nothing is formulaic, and no two nights are the same.
WHAT YOU GET
Enjoy a 5-course menu at 3100. The menu is chef’s choice, so dishes rotate regularly and reflect the best produce of the season. Get snacks like glazed carrots with cashews and confit garlic cream, and sauteéd broccolini garnished with miso mayo and almonds. Tuck into a sampler plate of pickled and fermented vegetables from seasons past, such as fermented radishes, pickled yellow beets, sauerkraut, and pickled fennel, served with smoky chili mayo. Taste steamed leeks and salt-brined pearl onions topped with Jerusalem artichoke foam and toasted buckwheat. Feast on fava beans with butter vinaigrette and capers. Bite into toasted sourdough bread with kimchi, talleggio and brandy cheese sauce, pickled mushrooms, sesame, and spring onion.

They discovered the tiny, tucked away space by spotting a handwritten note on the door that said ‘For Rent’. The original idea was to open a wine bar, but guests were so enamored with their inventive, hyper-seasonal snacks that they wanted more. Owners Rasmus Faber Thomsen and Thor Birkedal Andersen have a spirit of openness and adaptability, so they created a multi-course tasting menu and haven’t looked back. At 3100, they let what’s in season locally lead the way and develop new dishes almost daily. The vibe is relaxed and cozy, and they genuinely mean it when they say, ‘Come as you are.’
