Just beyond the windows, seaplanes gracefully descend from the sky and ferries sail by in sequence. In the open kitchen, the flames from the grill burn bright and chefs plate with precision. This may be the best view in the city, but you’re tempted to close your eyes and taste as each course transports you to a new flavor dimension. At Substans, they’ve paved their own path to earning a Michelin star with a rather relaxed approach to refinement. A whole choir of media outlets has been singing their praises over the years, but the White Guide might have said it best: this season-driven New Nordic menu with a Japanese umami is nothing short of ‘absolute masterclass gastronomy.’
WHAT YOU GET
Enjoy the 16-course ‘Stor Menu’ at Substans. The menu is chef’s choice, so dishes rotate regularly and reflect the best produce of the season. Begin your culinary journey with a cold vegetable bouillon garnished with fresh basil. Next, slurp chopped oysters on the half shell with sake and parsley vinaigrette. Taste poached Norwegian king crab nestled in a pie shell with fresh cheese and apples. Try miso celery served on a stick with smoked clam emulsion. Savor octopus sliced in the style of glass noodles with a sauce of ginger, carrot juice, brown butter, and coriander oil. Eat grilled peas in elderflower broth, garnished with whipped cream and caviar. Get langoustine tartare with kohlrabi, fermented strawberry juice, and a hint of red chili. Feast on flounder with fried fennel, beurre blanc, and tangy yuzushu. Bite into fermented potato bread with horseradish cream and fjord shrimp. Devour grilled cod brushed with brown butter and miso, served with Brussels sprouts dipped in clarified butter. Tuck into small potatoes in a Vin Jaune reduction, then get grilled monkfish and baby corn with mussel sauce.
