Of the 18 Danish restaurants with a Bib Gourmand distinction in the Michelin Guide, only one lies in the center of Aarhus. Perhaps unsurprisingly, it also happens to share the same DNA as the Michelin-starred Substans. Owned by chef René Mammen and his wife Louise, Substans’ sister restaurant has a relatively understated approach to cooking but places no less focus on phenomenal, in-season ingredients. With floor-to-ceiling windows opening onto the street and a laid-back bistro vibe, Pondus is high-quality and homey at the same time. Many have deemed their set menu an absolute steal, which is proof that superb food can come in charmingly simple packages.
WHAT YOU GET
Enjoy a 5-course menu at Pondus. The menu is chef’s choice, so dishes rotate regularly and reflect the best produce of the season. Start with a serving of three snacks, such as puffed bread with dried berries and fresh Loke cheese, crispy artichoke-stuffed chicken wings, and seasonal vegetable crudites with carrot emulsion. Next, taste lightly cured mountain trout in a fish and apple broth, accompanied by fresh green peas and coriander oil. Dig into fried new potatoes with cured egg yolk, white soy sauce, fresh radishes, and wild herbs. Get miso-glazed cod skewers with parsley cream, grilled summer corn, and juicy currants. For dessert, delight in buttermilk ice cream served with sweet strawberries, brown sugar and cinnamon cookie crumble, and foraged woodruff.

Husband and wife team René and Louise Mammen were already plenty busy with their first restaurant, Substans, but when the opportunity presented itself to open a second restaurant, they couldn’t pass it up. In 2013 they opened Pondus, a low-key bistro with a canalside location, exceptional food, and a stripped-down aesthetic. Organic Danish ingredients dictate the ever-changing menu and all wines on their impressive list are available by the glass. In the summer months, the tables spill out onto the sidewalk and the restaurant becomes one with the city. This is a place where you can sit back, relax, and enjoy the beauty of supreme simplicity right in the heart of Aarhus.
