While many cocktail bars in Copenhagen opt for a minimalist and subdued approach, the team behind Victory is shaking things up. Run by the crew formerly behind Ruby, their latest venture is a standout spot in every sense, and it all starts with the elevated 8th-floor location. Here, the cocktails may look like recognizable classics but the menu is peppered with seasonal infusions and innovative twists. The tableside service is personable, the decor has plenty of cool quirks, and the stellar sound system sets the tone for an easy-going night out. As you gaze at the harbor and see the city buzzing with life, this breathtaking bar feels as convivial as a local pub – and it has the Guinness to prove it.
WHAT YOU GET
Pick whatever you like at Victory. Taste a fruity and floral riff on a Negroni with strawberry-infused gin, Campari, vermouth, and a hint of rose. Sip on a Pisco Sour with fig leaf-infused pisco, lemon cordial, creamy whey foam, pear Eau de Vie, and a dusting of spinach powder. Try a Batanga with tequila, Mugicha tea, preserved lime, and housemade tonka cola, or a Sazerac with whiskey, cognac, raspberry cordial, and a spritz of shiso-scented absinthe. Taste a rose-colored twist on a Tom Collins with rhubarb-infused gin, clarified lemon, sugar, soda, and a garnish of local geranium leaves. If you’re in the mood for a martini, keep it classic with a lemon twist, go for a Gibson with red onion and rice vinegar, or make it dirty with koji and olive brine.
