4-course menu at V’italian in City Center – Even in a sea of stellar Italian restaurants around the city, this one stands out in all the best ways

Their style of cooking shows respect for classic Italian cuisine but with a modern plant-based twist. They’re crafty when it comes to creating punchy flavors and use only the freshest seasonal produce. V’italian is a subterranean restaurant with a pastel color palette, vibey music, and abstract art hanging on the walls. As you walk through Gråbrødretorv and step inside, you might not know exactly what you’re going to get, but the name gives a strong hint. And while not all of us are vegan, we can all agree that freshly baked focaccia, handmade pasta, espresso-infused tiramisu, and a good bottle of wine (or two) sounds divine any day of the week.

WHAT YOU GET

Enjoy a 4-course menu at V’italian. The menu is chef’s choice, so dishes rotate regularly and reflect the best produce of the season. Begin with freshly baked sourdough focaccia served with extra virgin olive oil, then bite into cime di rapa and zucchini topped with bergamot herb pesto. Taste lightly torched endive with pickled mustard seeds, fermented radish, and segmented orange. Have handmade pappardelle with sauteéd chanterelles, mushroom butter, orange zest, and dried rosemary. For dessert, indulge in tiramisu with made-from-scratch almond biscuits soaked in dark-roast espresso, pistachio cream, orange gel, a dusting of cocoa powder, and cognac syrup to finish.

What started as a pop-up in Hamburg in 2020 has since become a staple in the Copenhagen food scene, and while these days there are plenty of Italian restaurants to choose from, V’italian still manages to stand out. At the helm is Jonas Keller and Oliver Thygesen, who worked together at Polly, and Swedish-Malaysian chef KC Chan, who brings experience from renowned vegetarian restaurants VeVe and Bistro Lupa. Here, the cuisine is distinctly Italian, the ingredients come from small farms in Denmark and Italy, and although there are no animal products in sight, flavor is in full force. V’italian proves that leaving the planet better than we found it can be a profoundly delicious endeavor.
