This dynamic trio shares the same Nordic roots and worldly interpretations of a modern Copenhagen bakery, honoring traditional bakes through a globally-inspired lens. The names may vary, but the same guys are behind each shop – all carrying a selection of croissants, cardamom buns, and sourdough breads baked on-site to ensure freshness and flavor. With locations in Frederiksberg, Lyngby, and Amager, these neighborhood gems have garnered the attention of local and foreign critics. Just one month after opening, Ard landed a spot in The New York Times, and Berlingske awarded their fastelavnsboller six out of six stars for the past two years – noting that it doesn’t get better from a place without a Michelin star.
WHAT YOU GET
Pick whatever you like at Ard, Enlil, and Jato in Frederiksberg, Lyngby, and Amager. The selection of pastries varies with the seasons, so you always have a new reason to stop by any of their locations. Bite into a BMO with Thise butter and Vesterhavsost. Taste a fragrant cardamom bun made with spices ground in-house. Take a bite of a flakey plain croissant, hazelnut and chocolate croissant, or twice-baked almond croissant. Delight in the Gateau Marcel, a rich chocolate mousse cake, or try a seasonal layer cake, like pistachio frangipane layered with raspberry and rosewater jelly, apricot mousse, and white chocolate. Co-owners Simon Lund Clemmensen, Martin Sandgreen, and Mathias Poss know a thing or two about Nordic baked goods. The trio first met in 2018 while Simon and Mathias were baking Danish classics together in the river-side capital of Portugal, Lisbon. When Martin first joined the crew as a professional coffee connoisseur, he unexpectedly fell in love with the craft of baking, learning under Simon before taking on a baking apprenticeship in Hamburg to master his craft. The rest is history: Ard opened in Frederiksberg in May 2022, followed by Enlil in Lyngby the following year. Last October, Jato opened in Amager, and we’ve heard whispers of more shops coming soon.
