Pick whatever you like at Mother in City Center – Kødbyen’s buzzing Italian restaurant brings superb sourdough pizza to the heart of Copenhagen

After decades of working in kitchens across Italy and London, Roman-born chef David Biffani was the first to bring 100% natural, organic sourdough pizza to Copenhagen. Since founding Mother in Kødbyen 15 years ago, he has set a standard for long-fermented pizza doughs, becoming an institution for Italian comfort foods and hospitality along the way. Just this past weekend, he expanded Mother to Ny Østergade. Here, fine Italian imports – like prosciutto Toscano, n’duja di Spilinga, and Parmigiano Reggiano – are partnered with Danish produce on wood-fired sourdough crusts and flavorful antipasti.

WHAT YOU GET

Pick whatever you like at Mother in City Center. Grab a table, relax at the full bar, or take it to go. Get things started with freshly wood-fired focaccia, Italian cold cuts – like prosciutto, salami, capocollo, and salsiccia secca – or fresh Danish burrata and mozzarella. Taste a red-sauced Porcella pizza with confit porcini mushrooms, organic sausage, and mozzarella. Enjoy an Anque-Formaggio pizza with mozzarella, provola affumicata, pecorino, and parmesan, or a Salamina pizza with salami, creamy mascarpone, mozzarella, and tomato sauce. For lunch, bite into a warm panini with fillings like goat cheese, butternut squash, sautéed red onions, pesto, rucola, cherry tomatoes, and more. Drink refreshing classics like a Negroni, Aperol Spritz, and Bicicletta. Pair your meal with a glass from the extensive wine list, or sip one of Mother’s IPA or Pilsner draft beers brewed with their in-house sourdough yeast. End things on a sweet note with tiramisu, affogato, and more.
