Across Østerberg Ice Cream’s three locations, flavor-forward ice cream and sorbets serve as vehicles for bold flavor, all informed by a depth of scientific research. Cathrine Østerberg began her deep dive into ice cream studying Food Science at the University of Copenhagen, culminating in a master's thesis on ice cream structure under the guidance of one of the world's leading ice scientists. Just a year after opening Østerberg Ice Cream’s flagship in Østerbro, the Danish Gastronomic Academy awarded her an Honorary Diploma for her contributions to the local culinary zeitgeist. Today, she shares her knowledge in hands-on courses at her ice cream academy – and, of course, delicious scoops of ice cream at her shops around the city.
